Gluten Free Banana Bread/Muffins

I went gluten free about 6 years ago, and boy have times changed. I remember when it was hard to find a good substitute for some of my favorite foods. Banana bread being one of them! However, today it is quite easy to make a gluten free treat, and one that gluten lovers will enjoy as well! Here is one of my favorite recipes! Micah Approved!

 

-2 ripe bananas

-1/4 cup melted coconut oil and up to 1/4 cup water if the batter is a little thick (I notice a difference with alititude)

-1/2 cup honey or agave (i used slightly less)

-3 eggs

-1 T vanilla

-3 cup almond flour

-1/2 tsp salt

-1/2 tsp baking soda

1/2 cup walnuts

 

Directions:

Preheat oven to 350. I greased my pan with coconut oil spray and it worked great. I have used both muffin pans and a bread loaf pan. Timing will vary based on what you use, but I love how versatile this is! 

I mixed all the dry ingredients in one bowl, and the remaining in another bowl. Then I mixed the bowls together and placed in the pan. Once in the pan I topped it off with some  extra walnuts too! The original directions said to cook for 55 minutes and mine only took 45 so be sure to keep an eye on it!
