I combine the dry ingredients in one bowl and the wet in another (be sure banana is mashed well). Once both are mixed I combine them. You want a thick consistency, and can always add a bit more flour if needed to thicken. Use a nonstick pan and heat to medium. Pour batter in, shape, and cover. Carefully flip once you see air bubbles through the whole pancake. The second side cooks much quicker. Then top with your favorite fruits and enjoy!
